I spent yesterday celebrating Austin’s 25th birthday…well, really since last week! We threw a surprise get together Thursday night for him and it went off without a hitch!
We played it off like we were going to Top Golf, but going to pick up our friends Amber and Scotty, which wouldn’t be anything out of the ordinary, since we’ve picked them up before.
we had a great group of people to come and help celebrate!
We kept things simple with ordering pizza, and my friend Michele made the brownies!
It cant be a party without the guys playing Fortnite!
Yesterday was celebrating with his family, and we enjoyed steak, fries, and cheesecake! (I didn’t get any pictures last night!) It was nice just to enjoy each other’s company.
Now, on to the recipe!
Something big to make in the Keto world, are fat bombs. Normally these have few ingredients, including coconut oil, and you can play around for different flavors.
Just because these are labeled as Keto, doesn’t mean just those following the Keto diet can enjoy these little gems. This is a great healthy source of fat, and can be great as a snack or even dessert!
-1 cup coconut oil
-1 cup nut butter
-1/2 cup unsweetened cocoa powder (I used the dark chocolate kind)
-pinch of salt
1. Over low-medium heat, melt the coconut oil + nut butter in a pot. Mix well.
2.Add in cocoa powder and salt. Mix well.
3.Pour mixture into ice cube trays and freeze until solid. (You can also spread wax paper over a cookie sheet, and make this into a chocolate bark. I actually posted a chocolate bark recipe similar to these fat bombs! Check that out here.)
4. Pop out of ice tray when ready and enjoy! Must store in freezer.
‘Tis the season for shorts, skirts, and swimsuits! Which means showing off more than just your arms…your legs too!
This workout only requires one piece of equipment: loop resistance band.
These resistance bands are easy to find and very affordable! You can find them at Walmart, Target, most sporting goods stores, and amazon.
Most come in a pack of 2-3, at different levels of resistance, so you can always swap out bands at any time.
Now on to the workout!
Lower Body Resistance Band Workout
***Do 12-15 reps of each move (each leg when required)***
***Go through moves 2-3 times.***
1. Banded Squat.
Place band right above knees, lower down into a squat, keeping pressure/tension on the band. Return to starting position.
2. Inner Thigh Crossovers
Lower resistance band around ankles, and cross over one leg in front of the other, slightly at an angle, so you feel your inner thigh muscles being activated. Do a set on one side + swap to other side.
3. Glute Kickbacks
With band around ankles, Lift leg back behind you to work your gluteus and hamstrings. Do a set on one leg, then swap to other leg.
4. Banded Side Steps
Side step side to side, keeping constant tension on the band. Great move for working quads and thighs!
5. Banded Bridge w/ Upright Clamshell
Lying on your back with resistance band above knees, lift hips up in the air (pushing up with your heels) to make a straight line. In the “up” position of the bridge, take both legs out to the side for a “clamshell”. Return legs to center and lower back down to ground.
This workout is good because you can adjust the resistance on your band for whatever level you are at. Plus, it can be done anywhere, even while traveling!

If you look at our society today, it seems that everyone is always on the go, go, go.
Between school, work, working out, running errands, dropping kids off, picking kids up, all the after school activities and sports, its no wonder a lot of people turn to fast food or the quick and easy options like frozen pizzas to provide lunch or dinner.
Not saying that doing that everyone now and then is ok, because it totally is. I am all about finding a good balance…and I love my pizza too. But when we are constantly on the go, we want to be sure we are fueling out bodies with the proper nutrition it needs to thrive and function.
That’s where MealFit comes in.
Thomas Cox, the finder/owner of MealFit takes into consideration those people who are always busy. MealFit started out as meal planning, and has grown into a successful business providing results oriented meal programs: healthy catering, meal planning, meal prep, family meals, personal meals, and even gym nutrition programming, support, + guidance.
MealFit originally started in 2013 in Cookeville, Tennessee, and since October 2017, it has been in Birmingham, the hometown of Thomas.
They provide meal plans, catering, and even gym nutrition programming, but something I love about them are the meal prepped meals.
Every Monday him and his staff come in and cook food for anyone who ordered meals/bowls on his website. Between 4-6pm people can pick up their food from one of several locations in the Birmingham area, most of them being gyms.
You can choose items such as the roasted chicken, ground turkey, and steak, to bowls such as the Baja Beef Bowl, Vegetarian Bowl, or Chicken + Rice bowl. You can even choose what starch you want in some of the meals: sweet potatoes, red potatoes, or jasmine rice (all of which are delicious!)
Every week there are special bowls or foods that are offered. He recently had a Baja Bowl, and this week a cauliflower crust pizza was featured.
You don’t have to order every week, so there is no commitment to ordering all the time. The only requirement is that you order at least 5 items, which is easy to do, and very worth your while!
The food provided is nothing but great quality, wholesome foods to provide nutrition for the bodies God gave us.
Thomas showed me how he cooks some of his meats. He starts off by searing it with some of their from scratch seasonings they make in their kitchen. Then it’s off to the smoker!
Cooking for large quantities of people for catering events and even these prepped meals, calls for a big smoker. This one can fit a lot of meat in there at one time, and it’s smoked with cherry wood, giving the meat it’s delicious flavor.
Full of energy and passion, Thomas gives back by providing not only great food, but time. His business is already thriving here in Birmingham: he is catering a myriad of events, providing meals and plans, and is growing with his pick up locations for these prepped meals. He told me he will soon be providing all the food for the Highlands College Students. God is doing great things and has given him a wonderful gift of outreach and helping/providing to others.

Today I want to share something that’s on my heart this morning:
The last few days for me have been rough: both physically and mentally. I have had hardly any energy, I’ve been tired what feels like 90% of the day, I felt weak, “fluffy” (as I like to call it), not liked what I was looking at in the mirror, and in my mind I was picking out all my flaws and things I wish would change.
I’ve come a long way since my eating disorder (If you missed my story, you can read part 1 here, and part 2 here), and while I overcame it, it’s something you never truly heal from. I still have my moments and struggle with things.
I was complaining about it last night to Austin and this morning I woke up to him telling me “It’s a new day, just look forward and put in the work.” He also told me to stop beating myself up about it (referring to last night’s workout). This is exactly what I needed to hear! It made me realize how badly I was beating myself up over the last few days. I need reminders like this sometimes.
We all have these moments, and this is where self love is more important than we realize. Self Love has always been a struggle for me. It dates back all the way to my early teen years when I had my eating disorder. We see more self-hate today than ever before. We are always seeing products advertised to make us lose weight fast or to look beautiful. Seeing girls on social media looking a certain way makes us think we look terrible.
Well let me tell you something…and I am not only telling you this, but telling myself…
YOU. ARE. BEAUTIFUL. THE. WAY. YOU. ARE.
Flaws and all, you were made in the image of God and He has you just the way He wants you. Yes, some days we all will struggle with wanting to look different, smaller, nicer, etc., but when these thoughts start consuming you, it’s time to rethink who made you to begin with: the master artist!
I was scrollingg theough Instagram the other day and came across an artist I have loved since her Disney Channel days: Jordan Pruitt.
She has such an incredible voice, wonderful music, and an outlook on life that I admire. She posted a picture the other day and what she put underneath it was what I needed to hear. We need to be honest with ourselves…accepting all that is and all that we are. I will leave this here as I end my post. Please remember you are beautiful, strong, and capable of amazing things…just the way you are.

I figured I’d start this week with a quick little weekend recap, even though the weekend isn’t quite done yet.
Saturday morning started with the usual coffee while I watched the recent episode of The Alienist. This is a new show that started the other week on TNT and it is amazing! It is set in the 19th century (right up my alley), and is all about solving a crime/mystery. If you are looking for a new show, I highly recommend it!
I had a birthday cake protein bar for breakfast while finishing watching the episode, and I ate a banana with almond butter before I headed out for my haircut at 10am.

I was SO overdue for a haircut it wasn’t even funny! I just got it trimmed and had the lady add some long layers. It immediately felt 10x better! It may not be a huge difference to most, but it is to me and I love it!
For lunch I had leftover steak my dad grilled on top of some greens + a taste of turkey sausage he grilled with the steak as well.
In between some blogging and reading, I decided to try my hand at some protein donuts! I made some a few years ago, and I wasn’t crazy over the recipe I went by.
These chocolate protein donuts turned out great! Be on the lookout for this recipe soon!
For the rest of the afternoon, I did some more blogging, put up laundry, and got some things done around the house.
For dinner, mom and dad suggested Olive Garden, so I went straight for their minestrone soup…my favorite soup of theirs! I had half a breadstick with it too. It hit the spot!
The rest of the evening was spent relaxing and before bed I got into the bag of valentine Reese’s I bought myself. 😀
Reese’s are my absolute FAVORITE candy, and these little hearts did not disappoint, like all their others! I have already found the Easter eggs they put out…and let me tell you, I don’t know what it is about those, but they are the best out of them all!
Sunday morning I got up and did some light stretching, and enjoyed my morning coffee while catching up on some reading and other blogs. I had another protein bar for breakfast like I did Saturday morning.
I’m not very stylish, but on days where I don’t have to wear my workout clothes, I try to put more effort into my outfit. Sunday I wore my jeans (from Walmart), a light pink lacy top (from JCPenny), and a lightweight black cardigan on top (from old navy). As you can tell I am a skilled model…haha, not! Awkward poses are my thing…
I was excited to wear my new necklace I picked up after my haircut on Saturday. The salon I went to had a lady selling some clothes and jewelry and this necklace caught my eye. I’m not a huge jewelry wearer, but I do enjoy longer necklaces, bracelets, and rings.
After church, Granny and I headed out to lunch at Dale’s Southern Grill over in Hoover. I enjoyed their blackened tilapia with a side of squash and zucchini.
I also had a side of their carrot soufflé, which is so delicious, as my dessert.
When I got back home I had plans on meal prepping some veggies that I needed to cook before going bad.
I baked/roasted cauliflower and carrots at 400 for 30 minutes, and baked a spaghetti squash at 400 for 45 minutes.
I love spaghetti squash because you can pair it with most things: ground beef/turkey, chicken, etc. I plan on putting some pasta sauce on it later this week and adding some chicken!
As soon as those were done cooking, I wanted to get a low key jog in on the treadmill to move around a little, since it was cold, rainy, and dreary outside.
I ran 2 miles on the treadmill while watching an episode of Supernatural, and walked half a mile to cool down. Nothing fancy, but just what I needed. My lower back was still sore from some deadlifts I did the other day at the gym.
Post run was one of these chocolate protein donuts I made, with a little peanut butter on top. (I’m telling you, I’m a sucker for chocolate + peanut butter)
I made some fresh coffee for dad and I, and finished up with this post and plan to do some other work/reading I wanted to get to today.
Some good and positive changes are happening in my life, and I have been happier now than I have been in quite some time. Sometimes it takes hardships in life to realize what you are missing in life…as well as what ( or who) you need to get out of your life!!
